Dawn Foods Instant Meringue Powder

The Dawn Foods Instant Meringue Mix can be used to prepare a light, airy, and stiff meringue that is ideal for baking or for use as topping on desserts. 

Dawn Foods Instant Meringue Powder is a shelf-stable dry mix that comes packed in a 1 lb 8 oz. pouch.

All you have to do is combine the powder with hot water to produce a light and airy meringue that will not weep.

Ingredients: "Sugar, Dextrose, Egg Whites. cornstarch, Xanthan Gum, Contains 2% or less of: Artificial Flavor, Carob Bean Gum, Disodium Phosphate, Guar Gum, Salt, Sodium Aluminum Sulfate.

Preparation Instructions:

Step 1: add 2 lbs. of Hot tap water (120 to 140 degrees) to a 20-quart mixing bowl. Add the contents of 1 pouch of instant meringue powder and mix with a wire whip on low speed. Scrape bowl. 

Step 2: mix on high speed about 3 minutes to desired lightness. 

Step 3: Meringue topped pies must be browned for 3-5 minutes at 400 degrees to ensure room temperature shelf - life stability. Non browned meringue topped bakery items must be refrigerated (refrigerate 33 to 40 degrees after preparation.

This will cover 12 pies at 4.5 oz per pie

Storage instructions: "store in a clean, dry area away from direct heat and light at temperatures between 60f to 75f."
